I’m feeling a little tropical here, the passion fruit and mango at the moment is ? this coconut oatmeal topped with these deliciously juicy fruits and coconut and almond flakes was so scrumptious ?to make it: 1/2 cup oats 1/2 cup coconut mylk 1/2 cup water 1 tablespoon coconut butter 1 teaspoon maca powder 1 tablespoon maple syrup Combine all your ingredients in a non stick saucepan and cook until creamy. Did I burn my mouth eating these oats? You bet I did. ? I’m so used to my food being lukewarm after I take photos of it that I underestimated how hot it still was. ? I will always gladly burn my mouth for this bowl though. I’ve been really into soft, gooey and warm cooked fruit…apples especially. Just threw some on top of these cinnamon and banana oats. If not a fan of banana as a sweetener feel free to use apple sauce. Super yum! ❤️ . Cinnamon Oats 1/2 cup oats (quick or rolled, doesn’t matter or you can opt for some quick steel cut varieties too) 1 tbsp ground flaxseed 1/2 tsp cinnamon 1 sliced banana or 1/4 cup apple sauce Pinch of salt 1 cup unsweetened plant milk (I used @pacificfoods hemp milk) ? . Add all ingredients to a sauce pan and bring to a low medium heat to simmer. With a spoon or spatula, stir oats as it cooks, about 3 minutes. Remove from stove top and top oatmeal as desired. For some apple goodness, I took a Fuji apple and thinly sliced it up to cook on the stove top. Add a tsp of sweetener of choice to the pan with apples (I used @soomfoods date syrup), pinch of cinnamon, pinch of salt and 1 tbsp water. Allow apples to cook and brown until liquid is absorbed then pour over oatmeal. ?

    Oatmeal is great to mix up with one’s favourite fruits for an Energy Packed Breakfast, for me anything goes as long as it’s tasty. An interesting fact which I did not know is that oatmeal can treat various skin conditions too. Adding Passion Fruit and Mango that’s a first for me can just imagine the Tropical Experience. Ginger Oatmeal what an interesting combination this is. Cinnamon Oats is always a winner can never go wrong here. Thank You Rubybox Team for bringing healthy options our way 🙂
